Here's another edition of the Hungry Cyclist. I avoid the "gross meats" at all costs.

If by gross meats you mean feet, tongues, intestines, and organs (other than liver), you might have an argument; however fat, particularly duck fat, is a delicacy that every person should try at least once in something like fried potatoes. Pork neck has a surprising amount of meat that is superior for simmering in a low and slow meat-sauce marinara. The mighty and delicious ham hock deserves better than being lumped into the gross meats group.
